Holiday Cheerwine Cupcakes!



Hello loves! I feel like I say this every holiday season...but I can't believe it's here! If you are also already decorating and baking, I have created a fun and unique recipe for you to try. Cheerwine always releases their Holiday Punch this time of year and if you are looking for something sweet to make for parties, these soda cupcakes are perfect for a crowd. They look cute on display too!


If you have never had this drink before, this is a bright and bubbly one. It's a combination of pineapple juice, ginger ale and of course Cheerwine. I had so much fun cooking something up with it and I'm excited to share.


Don't worry. A batch of these isn't difficult to whip up! Here are all of the ingredients you'll need.


Cupcakes

  1. 1C Cheerwine Holiday Punch

  2. 1 box of King Arthur golden yellow cake mix

  3. 1 tsp Vanilla

  4. 1/3 C Vegetable oil

  5. 3 Eggs

  6. Jar of Cherries

Icing

  1. 1/2C Butter (softened)

  2. 3C Powdered Sugar

  3. 1 tsp vanilla

  4. 1 tbsp Cheerwine Holiday Punch

  5. 2 tbsp Whole Milk

To Decorate:

Red baking cups

Red and white straws

Decorating tip and bag


Cupcakes

  1. Mix together the oil, eggs, box of cake mix, and Holiday Cheerwine Punch until smooth. Note: I did go ahead and beat my eggs before I added them in the mixture.

  2. Preheat the oven to 350.

  3. Place red baking cups in two cupcake pans totaling 24.

  4. Fill up each cupcake a little less than halfway.

  5. Bake in the oven for 18-20 minutes until toothpick comes out clear.

  6. Let them cool.





Icing Prep


1. Beat together the powdered sugar, softened butter, vanilla, milk and Holiday Cheerwine Punch until smooth and the right consistency.

2. Place the icing into a decorating bag with tip. This is the one I used.



Final steps....


1. Cut straws into smaller ones to stick in the right side of the cupcake.

2. Pipe a dallop of the icing on the center of each cupcake. I love how it looks like whipped cream!

3. Place the straw in the cupcake. I liked it at an angle.

4. Pat each cherry off so juice does not run on the icing before adding it to the cupcake.

5. Place cherry on the center on top of the icing.





These are the cherry on top to a good meal this season with family and friends. They are enjoyable to make and I suggest sipping on a cold glass of the holiday punch while you're making some! It's so good. I've been a Cheerwine fan since I was a kid so I was honored about another partnership. If you didn't know, this brand is a family-owned one and from Salisbury, N.C.. not far from Charlotte!


Their seasonal soft drink can be found in North Carolina and South Carolina grocery stores until December 31st. If you are local to Charlotte, I did want to share that I found the straws and baking cups at Harris Teeter. The cake mix is sold at Harris Teeter and Whole Foods. I will also link the festive cupcake stand, kitchen towel, and napkins here if you like them.
